As we continue our cooking in the kitchen series my daughter and I decided to make homemade granola.
We have had this recipe for many years and never made it until now.
We changed it a bit to make it our own.
This recipe is very forgiving you can substitute nuts and dried berries and raisins to make it your own.
You can cut the recipe in half to make a smaller batch.
This is a tasty treat but not a healthy snack.
Homemade Granola
1/2 cup of oil
1 cup (2 sticks of butter)
2 tablespoons molasses
1 tablespoon vanilla extract
1 cup brown sugar
1 cup honey
1/2 teaspoon salt
2 pounds regular rolled oats
1/2 cup sunflower seeds
1 cup chopped almonds
2 cups Grape Nuts Cereal
1 pound coconut flakes
1 cup dried cranberries
1/2 cup chocolate chip morsels
In a large bowl microwave oil,butter,molasses,vanilla,sugar,honey,and salt until melted.
Let cool slightly; add oats,sunflower seeds,chopped almonds,Grape Nuts Cereal,Coconut flakes.
Oh the concentration on her face don’t you love that!
Make sure you follow the directions and don’t add the cranberries in before you bake.
As you can see we did add them before and they came out a little hard.
This was my fault for not following directions…okay I am a bad teacher.
So after you follow the directions and add the ingredients you will add this to 3 ungreased 15 1/2 x 10 1/2 pans.You don’t want it too thick on the pans.Spread it out so it will bake evenly.
I added parchment paper to my baking sheet first and then added the granola mixture.
Bake this at 350 for 20 -25 minutes and make sure you stir every 5-7 minutes.
When this is done it will still be slightly moistened until it is throughly dry.
Add the chocolate chip morsels when this is completely cool or they will melt.
And that’s it!Make sure to store this in an airtight container.
This makes a tasty treat that can be used as an ice cream topper,or mixed in yogurt.
We did a batch with chocolate morsels and a batch without.
If you don’t add the chocolate you could eat this as a cereal too!
This is a great treat to have on hand for on the go and for road trips too!
It tastes like a delicious buttery oatmeal cookie!
